My dream of creating a European zinc bar scene with classic cocktails (done right) came to fruition the day I met Bill Norris.
I wanted the quintessential classic cocktail bar ... that would be such a throwback .... it would seem new again. While others told me it couldn't be done, Bill grasped my concept with enthusiasm. He gave me what I wanted and then some. Not only did he create delicious cocktails that sell, he found the perfect head bartender that embraced our fresh, made-from-scratch, no bar-gun philosophy.
